Bajji Recipe- How to prepare breadfruit bajjis

Ingredients

  • Breadfruit-1/4 size
  • Besan powder- 1 cup
  • Red chilli powder-1tsp
  • Cumin seeds/Ajawan-1/2 tsp
  • Rice flour-1 tsp
  • Oil to deep fry
  • Salt to taste
  • Asafoetida- A pinch

Preparation

  • Peel the skin and core from the breadfruit and cut it in to thin slices of triangular shape. This measurement will yield around 30 slices.

Method

  • Mix besan flour, rice flour, salt, crushed cumin seeds/ajawan, dissolved asafoetida and red chilli powder by adding required amount of water. The consistency should be of dosa batter. Refer the fig below.
  • Rice flour is used to make the bajjis crispy. Instead of rice flour half teaspoon of baking soda can also be used.
  • Heat oil in a frying pan and dip each slice of breadfruit in the besan batter so that the breadfruit slice gets coating of besan batter and fry in oil.
  • Fry both the sides till the color changes and the breadfruit is properly cooked.
  • Breadfruit bajjis are ready to be served. These bajjis can be served with coconut chutney.
