Peel the skin and core from the breadfruit and cut it in to thin slices of triangular shape. This measurement will yield around 30 slices.
Method
Mix besan flour, rice flour, salt, crushed cumin seeds/ajawan, dissolved asafoetida and red chilli powder by adding required amount of water. The consistency should be of dosa batter. Refer the fig below.
Rice flour is used to make the bajjis crispy. Instead of rice flour half teaspoon of baking soda can also be used.
Heat oil in a frying pan and dip each slice of breadfruit in the besan batter so that the breadfruit slice gets coating of besan batter and fry in oil.
Fry both the sides till the color changes and the breadfruit is properly cooked.
Breadfruit bajjis are ready to be served. These bajjis can be served with coconut chutney.
