Rinse and wash the tindora cleanly under running water and chop them horizontally in to circular slices.
Method
Heat a wok or cooking pan and add the seasoning ingredients one by one. As the mustard seeds pop up and lentils turn brown, include the tindora slices. Give a quick stir.
Then include jaggery, salt, slit green chillies and 1/4 cup water. Combine well and close the lid. Let it cook in simmer till the tindora turns soft and tender.
Intermittently stir the stir fry and ensure even cooking. Sprinkle water if needed. Once the tindora slices get cooked, include fresh grated coconut. Mix well and switch off after a minute. Simple tindly stir fry is ready.
Notes
While the tindora is cooking, ensure it is not burnt. Add water if needed.
Fresh coconut topping makes the stir fry rich and yummy. So do not skip it.
