Seasoning ingredients

  • Ghee- 2 tsp
  • Cumin seeds- 1 tsp
  • Fenugreek seeds- 1/2 tsp
  • Curry leaves- Few

Instructions

Preparation

  • Peel off the chayote using a peeler and chop it in to medium sized chunks.

Method

  • Cook the chayote chunks with a cup of water and turmeric powder until the pieces turn tender and soft. Mean while in a mixer add grated coconut, raw rice, green chillies and grind them together to fine paste.
  • When chayote pieces are soft enough, include the ground coconut paste and salt. Combine everything well and let it boil for a while.
  • Finally add the whisked yogurt and stir. As the curry starts boiling, switch off the flame.
  • Heat a seasoning pan add ghee, cumin, fenugreek and curry leaves in order. As the fenugreek seeds turn little brown, transfer it to yogurt curry.
  • Very comforting chayote yogurt curry is ready to serve.

Notes

  • Always use fresh curds and not sour one for this recipe.
  • The purpose of raw rice is to thicken the curry, if you want you can skip it too.
  • Do not over pour water to cook chayote pieces. As we are adding whisked yogurt at the end, the curry would turn too thin.
  • Do not skip seasoning the yogurt curry with fenugreek and cumin seeds. This seasoning enhances the flavor of yogurt curry.
