Carrot Kosambari Recipe | Rama Navami Special

Ingredients

  • Carrot- 2 nos.
  • Split yellow lentils- 1/8 cup
  • Fresh grated coconut- 1/4 cup
  • Coriander leaves- handful
  • Curry leaves- Few
  • Ginger- 1" piece
  • Salt- 1/2 tsp
  • Lemon- half

Instructions

Preparation

  • Rinse the yellow lentils using enough water and soak it for around half an hour.

Method

  • After soaking the lentils would have turned soft. Drain the water and keep aside. Wash and grate the carrot using a fine grater.
  • Finely chop coriander leaves, curry leaves and ginger. In a wide bowl add grated carrot, lentils, coriander, curry leaves, ginger, salt. Give a nice mix. Finally squeeze lemon juice and stir.
  • Healthy carrot lentil salad is ready to serve on the occasion of Rama Navami.

Notes

  • Adding salt just before serving is best practice. Otherwise it will ooze out water.
  • You can include finely chopped green chillies too. I haven't added as kids don't chilly spice.
  • You can replace yellow lentils by split chickpeas also.
  • Grated raw mango can replace lemon juice, which tastes even better.
