Sweet potato recipe-Sweet potato palya-Genasina oggarane

Ingredients

  • Sweet potatoes- 2 big size
  • Jaggery- big lemon size
  • Salt- 1 to 1.5 tbsp
  • Grated coconut- Handful
  • Green chilly- 2 nos.
  • Turmeric powder- 1/2 tbsp

Seasoning Ingredients

  • Oil- 3 tbsp
  • Mustard seeds- 1 tbsp
  • Urad dal- 1 tbsp
  • Broken red chilly- 1 no.
  • Curry leaves- few

Instructions

Preparation

  • Chop sweet potato in to medium sized cubes. Slit the green chillies. Keep them aside.
  • Heat a pan/kadai add 3 tbsp of cooking oil, mustard seeds, urad dal, broken red chilly and curry leaves. When mustard seeds splutter add the chopped sweet potato cubes. Saute for a while.
  • Now add salt, jaggery, slit green chillies and turmeric powder. Saute well.
  • Add 1.5 cups of water and let it cook in low flame. Keep stirring in between for even cooking.
  • When sweet potato cubes turn almost mushy add grated coconut, give a stir and switch off the flame.
  • Sweet potato palya is ready to serve. Tasty evening snack with hot tea.....

Note:

  • Do not skip adding grated coconut, it enhances the taste.
  • This palya should be sweeter, so use only minimum green chillies. Otherwise it turns spicy and cannot be consumed as snack.
