Snakegourd Raita Recipe
This comforting snake gourd raita tastes good with Rice.

- Snakegourd- half or 1 cup snakegourd cubes
- Curds - 1/2 cup
- Green chilly- 1 no.
- Salt- 1/2 tsp or to taste
- Asafoetida- A pinch
Seasoning Ingredients
- Cooking oil - 1 tsp
- Mustard seeds- 1/4 tsp
- Split black gram lentil- 1/4 tsp
- Broken red chilly- 1 no.
- Curry leaves- few
Method
Cook snakegourd pieces adding water enough to immerse them. The pieces should turn soft after cooking. Let it cool.
Transfer the cooked snakegourd, green chilly and salt in to mixer. Grind in to smooth paste.
Now mix the ground paste with whisked curds. Include asafoetida and stir.
Heat a seasoning pan adding oil, mustard seeds, split black gram lentil, red chilly and curry leaves. When mustard seeds pop up, switch off the flame and add it to snakegourd raita.
Comforting snakegourd raita is ready to serve as a combo with rice.
Note:
Instead of grinding, you can directly mix cooked snakegourd pieces with curds. Chopped green chilly can be added later.
To enhance flavor add a pinch of roasted cumin powder.
