In a vessel add ash gourd pieces,1 cup water and turmeric powder. Cook it till the water starts boiling. Now add tamarind extracted juice, jaggery and one strand of curry leaves. Let the ash gourd to cook till soft.
Once the ash gourd pieces are well cooked add the ground coconut masala and little water to maintain the consistency of curry. Mix well and bring this to boil.
For Seasoning: Heat oil, add urad daal, mustard seeds, one broken red chilly and curry leaves in the order. When the mustard seeds start spluttering turn off the flame and add the seasoning to ash gourd curry.
Now the ash gourd coconut curry is ready to serve.This ash gourd curry goes very well with rice, chapati and Dosa.
