Ash Gourd Recipes- Ash Gourd Coconut Curry

Ingredients

  • chopped Ash gourd pieces-5 cup
  • Tamarind- Indian gooseberry size
  • Jaggery- Big lemon size
  • Turmeric powder- 1/4 tsp
  • Salt to taste

Ingredients for coconut masala

  • Coconut- 1 cup
  • Coriander seeds- 3 tsp
  • Urad daal- 1tsp
  • Split Bengal gram- 1/2 tsp
  • Cumin seeds- 1 tsp
  • Fenugreek seeds- 1/2 tsp
  • Red chillies- 3 or 4
  • Curry leaves- 1 strand
  • oil - 2 tbsp

Seasoning ingredients

  • Mustard seeds- 1/2 tsp
  • Urad daal- 1/2 tsp
  • Curry leaves- 1 strand
  • Red chilly- 1
  • Oil- 1 tsp

Instructions

Preparation

  • Soak tamarind in warm water for 10 to 15 mins.
  • Roast urad dal, split bengal gram, coriander seeds, cumin seeds, fenugreek seeds, red chillies and curry leaves one after the other in 2 tea spoon oil. Grind these roasted ingredients along with grated coconut and water to a medium fine paste. Keep it aside. This coconut masala looks as below.

Method

  • In a vessel add ash gourd pieces,1 cup water and turmeric powder. Cook it till the water starts boiling. Now add tamarind extracted juice, jaggery and one strand of curry leaves. Let the ash gourd to cook till soft.
  • Once the ash gourd pieces are well cooked add the ground coconut masala and little water to maintain the consistency of curry. Mix well and bring this to boil.
  • For Seasoning: Heat oil, add urad daal, mustard seeds, one broken red chilly and curry leaves in the order. When the mustard seeds start spluttering turn off the flame and add the seasoning to ash gourd curry.
  • Now the ash gourd coconut curry is ready to serve.This ash gourd curry goes very well with rice, chapati and Dosa.

Note:

  • 4 table spoon of cooked toor daal can also be added to the same curry. Toor daal thickens the curry and gives different taste.
