Wash the cucumbers under running water and pat dry them. Using a sharp knife chop the cucumbers very finely. Next whisk the yogurt in wide bowl and add chopped cucumber, salt, red chilly powder and cumin powder. Combine well.
Garnish cucumber raita with generous coriander leaves. Serve it with vegetable pulao or tomato pulao.
Notes
If you are using Indian cucumber, it would be better to discard the peel and seeds.
Always choose tender cucumber for raita.
Thick yogurt is always recommended for this raita.
