Pearl Millet Dosa | Healthy Breakfast
Pearl millet is a healthy cereal and it is good for diabetic patients. Peral millet dosa is an easy and filling breakfast for them.

- 1 cup Pearl millet
- 1/4 cup Split black gram lentils (urad dal)
- 1/4 cup Rice flakes
Method
Drain the water completely from soaked ingredients and add them to mixer. Meanwhile soak the rice flakes for 10 minutes and add it as well to the same mixer. Grind smooth and fine batter adding water as needed.
The batter consistency should be same just like other dosa batter. Keep it covered for fermentation which may need 8 hours.
Next heat a dosa griddle and pour a ladle full of batter at the centre. Spread in circular fashion like dosa and let it cook covered for a minutes. Using a flat ladle remove from the griddle, repeat the process with rest of the batter.
Healthy and fibre rich pearl millet dosa is ready to serve with chutney and sambar.
- Soaking the millets for good number of hours is must as it is a hard cereal and takes time to soften.
- The lentils and rice flakes make the dosa softer. You can even soak a tsp of fenugreek seeds with millets.
- Spicy coconut chutney and sambar pairs well with dosa. You can even consider potato masala as combo.
